Nigerian crayfish: dried seafood seasoning, not fresh crawfish
How to identify whole or ground Nigerian crayfish, choose a useful substitute and handle the shellfish and salt questions.

The shopping answer
In Nigerian recipes, crayfish commonly means small dried shrimp or prawns, often ground as seasoning. Flo Chinyere explains this naming distinction; Ozoz Sokoh also identifies ground crayfish as dried small prawns. The intended ingredient supplies concentrated seafood flavor.
Look in a West African grocer for dried crayfish or ground crayfish. A package of fresh or frozen Louisiana crawfish tails is a different product with much more moisture and a different culinary role. Do not replace a spoonful of powder with an equal spoonful of fresh seafood.
Whole, ground and flavored are three different buys
Whole dried crayfish can be ground with a suitable dry mill when the recipe calls for powder. Ground crayfish saves that step. Read the ingredients on anything labeled crayfish seasoning or crayfish flavor: a stock cube or mixed seasoning may include salt and other ingredients rather than simply dried seafood.
Measure after grinding when the recipe asks for ground crayfish. Whole pieces pack loosely, whereas powder fills the spoon more densely. Lola Osinkolu’s akara recipe gives different spoon amounts for its whole and ground forms; that illustrates why one universal conversion would be misleading.
If you shop in another kind of Asian or international market
Plain dried shrimp can serve the same broad seasoning role, but products differ in size, smoke, salt and texture. Read their preparation directions before use; do not assume a product intended for soaking can be added directly as powder.
Choose a recipe that allows the substitution and begin with its stated amount. Shrimp paste, fish sauce, dried anchovies and fresh shrimp each add something different. They are not automatic one-for-one replacements for dry crayfish, especially when extra salt or liquid would matter.
Crayfish still counts as shellfish
Drying or grinding does not turn shrimp into a shellfish-free spice. The FDA identifies shrimp among major crustacean shellfish allergens. Read the entire ingredient list and any advisory information, including on soup mixes and bouillon.
For a dish that permits omission, leave crayfish out rather than replacing it with another shellfish for someone avoiding shellfish. A suitable mushroom seasoning or vegetable stock can add savory flavor, but loses the seafood note; check that substitute’s own ingredients. Removing meat alone does not make a recipe vegetarian if crayfish or fish remains.
Keep the packet’s storage instructions
Buy sealed, labeled food from a supplier you can identify. Follow its dry-storage, refrigeration or freezing directions and its instructions after opening. The fact that something is dried does not establish a universal pantry shelf life.
Protect the product from moisture, use a clean dry spoon and keep it closed. Do not use visibly moldy or damp material. This guide concerns commercially prepared dried seafood; it does not validate home drying as a shelf-stable preservation method.
